Spinach Salad with Mandarin Oranges

And

Honey Balsamic Vinaigrette

Salad:

1 cup baby spinach leaves

� c. shaved red onion

Mandarin oranges

 

Honey-Balsamic Vinaigrette:

2T. balsamic vinegar

1T. honey

2t. Dijon mustard

1t. olive oil

Salt and pepper

 Thoroughly wash baby spinach (I pinch off big thick stems). Shave red onion as thin as possible. Add mandarin oranges and toss gently. Mix ingredients for vinaigrette and stir well. Add to salad and toss gently until salad is thoroughly coated.
